The thing about fall is that I have to make quick breads. I don't know why. I just do. Here's a new favorite I discovered while figuring out what to do with the huge bag of apples my CSA delivered this week. OK, and last week's bag too.
Fresh Apple Bread
1 cup butter (yes, truly)
4 eggs
2 cups sugar
2 tsp. baking soda
1 tsp. salt
2 tsp. vanilla
4 cups flour
4 cups sliced apples (sliced thin like you would for apple pie)
1 cup chopped pecans
Topping
1/4 cup butter
1/4 cup + 2 Tbsp. flour
1/4 cup + 2 Tbsp. brown sugar
2 Tbsp. cinnamon
Blend butter, eggs and sugar until fluffy. Add soda, salt and vanilla; beat. Add flour and mix well, then add apples and nuts. Grease three bread pans and divide batter evenly among them. Mix topping ingredients until crumbly. Sprinkle on top of batter in bread pans. Bake at 325 degrees for 55-60 minutes. To freeze, wrap in plastic wrap, then foil.
Makes 3 loaves. Eat one and freeze two!
